Tomat-Ohhhhh! hCG -Friendly Garlic & Sun Dried Tomato Chicken

We know... eating chicken as part of your prescription hCG program can get boring for 30 days straight, especially if you're on a 500-calorie diet.

Luckily for you, our NewMeMD wellness team has some creative ways to cook chicken up our sleeves. Here's our newest hCG -friendly chicken recipe that's loaded with zesty garlic and savory sun dried tomatoes:


hCG -Friendly Garlic & Sun Dried Tomato Chicken


Ingredients
- 1 lb. boneless skinless chicken breasts, cut then into 4 oz. portions
- 1 tbsp. vegetable or olive oil
- 2 heads garlic, peeled (about 20 cloves)
- 1 medium white onion, cut in half from root to tip and sliced thin
- ½ cup sun dried tomatoes, chopped (not packed in oil)
- ¼ cup white wine
- ½ -3/4 
cup chicken stock
- 1 tsp. dried oregano
- black pepper to taste

Directions
1. Preheat oven to 325 degrees. Rinse chicken under cold running water then pat dry. Crush 2 of the garlic cloves.
2. Place an oven-proof skillet over medium heat, and add some oil. Add the crushed garlic to the pan and place the chicken on top of the garlic. You can toss the remaining garlic cloves.
3. Cook chicken for about 8 minutes, then flip and cook the other side for about 4 more minutes.
4. Remove chicken from the skillet and set it aside.
5. Add onions and tomatoes over the caramelized garlic and cook for 3-4 minutes, then reduce heat and add the wine. 

6. Use the back of a wooden spoon to scrape up any brown bits from the bottom (this technique will remove the flavors stuck to the bottom of your pan).
7. Add the chicken back into the skillet, then add the stock until the chicken is half-way covered. 

8. Add oregano and black pepper to taste. 
9. Cover, bake for another 30 minutes, serve immediately and enjoy eating hCG -friendly!

Greek Lightning: NewMeMD 's hCG -Friendly Mediterranean Stuffed Chicken

One of the most popular types of eating regimens out there today (the Mediterranean Diet) is derived from the eating habits of those inhabitants straight out of southern Europe-- in Greece... and probably because the food is so wonderfully filling & delicious.

Well you don't have to travel all the way to Athens to get a taste of the Balkans. In fact, you can cook up some great Greek grub right at home (that's hCG -friendly too). At just 210 calories per serving, this quick stuffed chicken recipe is a hassle-free, yet healthful dinner alternative... In fact, we at NewMeMD highly recommend it!


hCG -Friendly Mediterranean Stuffed Chicken


Ingredients
- 1 large red bell pepper
- ¼ cup crumbled feta cheese
- 2 tablespoons pitted Kalamata olives, 
finely chopped
- 1 tablespoon minced, fresh basil
- 8 boneless, skinless chicken breasts (approx. 6 oz. each)


Directions
1. Preheat broiler and cut bell pepper in half lengthwise. Discard seeds and membranes.
2. Place pepper halves 'skin sides up' on a foil-lined baking sheet.
3. Broil for 15 minutes or until blackened.
4. Place in a zip-top plastic bag and seal. Let stand for 15 minutes. Peel and finely chop.
5. Prepare grill to medium high heat. Combine bell pepper, cheese, olives and basil.
6. Cut a horizontal slit through the thickest portion of each chicken breast to form a pocket.
7. Stuff two tablespoons of bell pepper mixture into each pocket, then close each opening with a toothpick.
8. Sprinkle chicken with ¼ teaspoon salt and ¼ teaspoon of black pepper.
9. Place chicken on a grill rack coated with cooking spray. Broil for at least 6 minutes on each side or until done.
10. Remove from broiler, cover loosely with foil and let stand for ten minutes. 

11. Serve and enjoy eating hCG -friendly (makes 8 servings)!

Helpful hint: You can cut back on your prep time by chopping olives, mincing basil and trimming chicken, while the peppers cook.

Taste and Sea: NewMeMD 's hCG -Friendly Portabella & Crab Pizza

At NewMeMD we know that certain foods (like pizza or some types of seafood) are considered "off limits" while you're on your prescription hCG weight loss program. 

There are, however, some creative ways you can enjoy similar fare, without all the extra calories or the guilt... like this week's featured hCG recipe for Portabella and crab pizza!


hCG -Friendly Portabella & Crab Pizza


Ingredients
- 1 large Portabella mushroom
- 3 oz. crab meat
- 1 tbsp tomato
- 1 clove garlic, diced
- 1 green onion, diced
- ½ cup spinach, shredded
- 2 tbsp cilantro
- ½ tsp oregano
- ¼ tsp pepper
- ¼ tsp cayenne pepper

Directions
1. Preheat oven to 400 degrees.
2. In a blender puree: dried tomato, garlic, onion, spinach, cilantro, oregano, pepper and cayenne pepper.
3. Fold in crab meat.
4. Remove stem of the portabella mushroom and spoon a thick layer of crab mixture into the mushroom.
5. Place stuffed mushroom into preheated oven for 20 minutes.
6. Top with mozzarella or Parmesan if desired/approved.
7. Serve and enjoy eating hCG -friendly when cooked and cooled down!


NOTE: You can also use 19 standard cooked shrimp in place of the crab for fewer calories!

But with just six simple ingredients and a few minutes of prep time, however, your poultry platter doesn't have to be so blah... Why not try out this great new recipe from our NewMeMD wellness team for supper tonight?!

hCG -Friendly Chicken & Spinach Roll-Ups


Ingredients
- 3.5 oz boneless, skinless chicken breast
- 3 cups fresh spinach
- 1 oz. (or 2 tbsp.) of fresh squeezed lemon juice
- 3 garlic cloves, minced
- 1 Melba Toast round
- 1/2 cup low sodium broth

Directions
1. Pound chicken breast flat.
2. Saute spinach with lemon juice and garlic.
3. When cooked, mound spinach in the middle of the chicken and roll up.
4. Top with hCG -friendly spices of your choice, along with crumbled up Melba Toast round.
5. Place in baking pan and add broth.
6. Bake at 350 for 30 minutes.
7. Cool, serve & enjoy eating hCG -friendly (makes 1 serving)!
