Greek Lightning: NewMeMD 's hCG -Friendly Mediterranean Stuffed Chicken

One of the most popular types of eating regimens out there today (the Mediterranean Diet) is derived from the eating habits of those inhabitants straight out of southern Europe-- in Greece... and probably because the food is so wonderfully filling & delicious.

Well you don't have to travel all the way to Athens to get a taste of the Balkans. In fact, you can cook up some great Greek grub right at home (that's hCG -friendly too). At just 210 calories per serving, this quick stuffed chicken recipe is a hassle-free, yet healthful dinner alternative... hCG -Friendly Mediterranean Stuffed Chicken


Ingredients
- 1 large red bell pepper
- ¼ cup crumbled feta cheese
- 2 tablespoons pitted Kalamata olives, 
finely chopped
- 1 tablespoon minced, fresh basil
- 8 boneless, skinless chicken breasts (approx. 6 oz. each)


Directions
1. Preheat broiler and cut bell pepper in half lengthwise. Discard seeds and membranes.
2. Place pepper halves 'skin sides up' on a foil-lined baking sheet.
3. Broil for 15 minutes or until blackened.
4. Place in a zip-top plastic bag and seal. Let stand for 15 minutes. Peel and finely chop.
5. Prepare grill to medium high heat. Combine bell pepper, cheese, olives and basil.
6. Cut a horizontal slit through the thickest portion of each chicken breast to form a pocket.
7. Stuff two tablespoons of bell pepper mixture into each pocket, then close each opening with a toothpick.
8. Sprinkle chicken with ¼ teaspoon salt and ¼ teaspoon of black pepper.
9. Place chicken on a grill rack coated with cooking spray. Broil for at least 6 minutes on each side or until done.
10. Remove from broiler, cover loosely with foil and let stand for ten minutes. 

11. Serve and enjoy eating hCG -friendly (makes 8 servings)!

Helpful hint: You can cut back on your prep time by chopping olives, mincing basil and trimming chicken, while the peppers cook.
