Tomat-Ohhhhh! hCG -Friendly Garlic & Sun Dried Tomato Chicken

We know... eating chicken as part of your prescription hCG program can get boring for 30 days straight, especially if you're on a 500-calorie diet.

Luckily for you, our NewMeMD wellness team has some creative ways to cook chicken up our sleeves. Here's our newest hCG -friendly chicken recipe that's loaded with zesty garlic and savory sun dried tomatoes:


hCG -Friendly Garlic & Sun Dried Tomato Chicken


Ingredients
- 1 lb. boneless skinless chicken breasts, cut then into 4 oz. portions
- 1 tbsp. vegetable or olive oil
- 2 heads garlic, peeled (about 20 cloves)
- 1 medium white onion, cut in half from root to tip and sliced thin
- ½ cup sun dried tomatoes, chopped (not packed in oil)
- ¼ cup white wine
- ½ -3/4 
cup chicken stock
- 1 tsp. dried oregano
- black pepper to taste

Directions
1. Preheat oven to 325 degrees. Rinse chicken under cold running water then pat dry. Crush 2 of the garlic cloves.
2. Place an oven-proof skillet over medium heat, and add some oil. Add the crushed garlic to the pan and place the chicken on top of the garlic. You can toss the remaining garlic cloves.
3. Cook chicken for about 8 minutes, then flip and cook the other side for about 4 more minutes.
4. Remove chicken from the skillet and set it aside.
5. Add onions and tomatoes over the caramelized garlic and cook for 3-4 minutes, then reduce heat and add the wine. 

6. Use the back of a wooden spoon to scrape up any brown bits from the bottom (this technique will remove the flavors stuck to the bottom of your pan).
7. Add the chicken back into the skillet, then add the stock until the chicken is half-way covered. 

8. Add oregano and black pepper to taste. 
9. Cover, bake for another 30 minutes, serve immediately and enjoy eating hCG -friendly!
